Herb Crusted Cod With Aparagus & Poached Egg - 200 Calories (Serves 1)

  • Pinch of Turmeric, Cumin, Thyme & Black Pepper
  • 1 egg
  • 115g of cod (boneless and no skin)
  • 80g of asparagus spears
  • Foil (for wrapping cod in)
  • Splash of vinegar
  1. Pre-heat oven to 180c
  2. Place a piece of foil on a non stick oven tray
  3. Place cod on the foil & sprinkle the Tumeric, Cumin, Thyme & Pepper over cod
  4. Fold up the foil to cover the fish like a parcel
  5. Place in oven and bake for 15-20 minutes until cooked through
  6. Meanwhile cut 80g of asparagus spears and place in a pan of boiling water
  7. Boil for 6 minutes (as per directions)
  8. Boil another pan of water and add the egg (carefully)
  9. You can use a splash of vinegar to keep the egg together if you need to
  10. Cook for 5-6 minutes
  11. Then add the cod on a plate with asparagus on the side
  12. Place the poached egg on top of the asparagus
  13. Enjoy
