  • 180g macaroni (dry weight)
  • Fry light
  • 1 onion, chopped
  • 2 leeks, trimmed & sliced
  • 200g button mushrooms, halved or quartered
  • 8 cherry tomatoes, halved
  • 2 tsp grated half-fat cheddar cheese
  • 1 tbsp wholemeal breadcrumbs
  • 250g broccoli
  • 2 tbsp cornflour
  • 300ml skimmed milk
  • 170g virtually fat-free fromage-frais
  • Black pepper
  1. Preheat oven to 190c gas mark 5
  2. Cook the macaroni according to packet instructions, drain and keep warm
  3. Make the white sauce by blending the cornflour with a little cold milk to a paste
  4. Bring the remaining milk to the boil, reduce heat and stir in cornflour mix
  5. Cook on low heat until thick and smooth, stir constantly to avoid lumps
  6. Remove from heat, stir in fromage-frais and pepper, cover and set aside
  7. Spray a frying pan with fry light, place on low heat
  8. Add onions & leeks and mushrooms, cook for 5 minutes till tender, add tomatoes
  9. Mix in the cooked macaroni, spoon into a baking dish, pour over sauce
  10. Sprinkle with grated cheese & breadcrumbs over the top
  11. Bake in oven for 15-20 minutes till golden brown
  12. Serve with broccoli
