  • 30g basmati rice (dry weight)
  • Fry light
  • 2 spring onions, finely chopped
  • 1 garlic clove, crushed
  • 1 tsp grated fresh root ginger
  • ½ red pepper, finely sliced
  • Few pak choi or chinese cabbage leaves
  • 150g cooked peeled prawns
  • 1 tbsp chopped fresh coriander
  • 1 tbsp soy sauce

  2. Spray fry light on a non stick wok and place over a medium heat, when hot...
  3. Add spring onions, garlic, ginger and stir fry for 2-3 minutes
  4. Add the red pepper, Chinese cabbage & prawns, cook on high heat for 2-3 minutes
  5. Serve with boiled rice, garnished with coriander & soy sauce
