Oven Baked Salmon & Vegetable Parcels - 290 Calories (Per serving - Serves 2)

  • 60g carrot
  • 60g leeks, trimmed & sliced
  • 100g button mushrooms, sliced
  • 2 spring onions, chopped
  • 2 tsp chopped fresh root ginger
  • Juice of 1 lemon
  • 2 x 100g salmon fillets, skinned
  • 1 tbsp soy sauce
  • Black pepper
  • 200g boiled noodles
  • 2 tbsp chopped fresh coriander
  1. Preheat oven to 180c, gas mark 4
  2. Peel thin strips off the carrot with a potato peeler
  3. Mix with leek & mushroom, spring onion, ginger & lemon juice
  4. Place each salmon fillet in center of a large square piece of kitchen foil
  5. Add the prepared vegetables, sprinkle with soy sauce & black pepper
  6. Fold the foil over the fillets to make a parcel & seal the edges
  7. Place on baking tray and cook for 15 minutes or until cooked through
  8. Put cooked noodles on a small plate x2
  9. Arrange salmon and vegetables on top of noodles & scatter with coriander
