Cheese & Potato Pie With Leeks, Mushrooms & Tomatoes - 309 Calories (Per Serving - Serves 2)

  • 400g potatoes, peeled & cubed
  • 4 tbsp low-fat natural yoghurt
  • 4 tbsp skimmed milk
  • 2 tbsp chopped parsley
  • Black pepper
  • 60g reduced-fat cheddar cheese, grated
  • Fry light
  • ½ onion, finely chopped
  • 60g leeks, trimmed & sliced
  • 1 red or yellow pepper, de-seeded & cut into pieces
  • 100g button mushrooms, quartered
  1. Pre-heat oven to 180c, gas mark 4
  2. Boil potatoes for 15-20 minutes, until tender but not mushy
  3. Drain well, return to warm pan, add yoghurt & milk & mash until smooth
  4. Stir in the parsley & season with black pepper, then stir in most of grated cheese
  5. Keep a little cheese for topping
  6. Spray a pan with fry light, cook onion, leeks, peppers and mushrooms
  7. Spread half of mash over bottom of oven proof dish, add vegetables, then mash
  8. Rough up top with a fork and sprinkle over remaining cheese
  9. Bake in oven for 15 minutes until golden brown
  10. Serve immediately
