Salmon & New Potato Salad - 2 Syns on Extra asy & Original Plans

Ingredients
  • 1 fresh or defrosted salmon fillet
  • half a small red onion
  • shredded lettuce
  • Sliced cucumber (cut in halves)
  • 6-8 cherry tomatoes (halved)
  • 5-6 spring onions (sliced)
  • 200g new potatoes
  • 2 tbsp of light mayonnaise (I used Hellman's)
  • Salt & Pepper to season
Instructions
  1. Place the salmon fillet in an oven proof dish or wrap in tin foil
  2. cook for 15-20 minutes until cooked through (but not dry)
  3. Boil the new potatoes until soft (20 - 25 minutes)
  4. Once Salmon is cooked, remove from dish and put onto a plate
  5. Separate the salmon into flakes and allow to cool
  6. Once potatoes cooked, remove from hot water and transfer to cold water to cool
  7. Take a large bowl or plastic container
  8. Add the lettuce, tomatoes, red onion, spring onions and cucumber and mix
  9. Then slice the cold new potatoes into small cubes and add to the salad
  10. Then add the salmon flakes and mix everything together well
  11. Add Salt & pepper to taste
  12. Add a tbsp of light mayonnaise and mix (mayo binds it all together too)
  13. Serve & Enjoy! - simple
