Speed Soup - Slimming World - Free On Extra Easy Plan

Ingredients
  • 1 can of mixed bean salad (drained)
  • 1 can of green lentils (drained)
  • 2 cans of chopped tomato
  • 1 can of baked beans (drained)
  • 2 large leeks (chopped)
  • 1 large onion (diced)
  • 4 medium carrots (chopped)
  • 2 parsnips (diced)
  • 1 green pepper
  • 1 red pepper
  • 1 yellow pepper
  • 2 chicken stock cubes
  • salt & pepper
  • water enough to cover all the ingredients
Instructions
  1. Prepare vegetables & drain cans
  2. Split ingredients into 2 pans as even as you can - i didn't have a big enough pan
  3. Make up stock with 2 -3 chicken oxo cubes and around 2000ml of hot water
  4. Pour stock over the ingredients so it just covers over
  5. Bring pans to the boil then simmer until vegetables are soft (20-25 mins)
  6. You can blend if you wish but I left mine a chunky consistency
  7. Serve and enjoy - you can freeze in batches too if you want
