Ingredients
  • 700g potatoes, sliced
  • Fresh thyme
  • 650g extra lean diced lamb
  • 2 onions, chopped
  • 2 large carrots, cubed or sliced
  • 4 pieces of celery
  • 200g of swede, chopped
  • 600ml lamb stock
  • 4 tbsp tomato puree
Instructions
  1. x smallish casserole bowls - add a layer of potato slices at the bottom of each
  2. Add some of the fresh thyme on top
  3. Add the diced lamb, onions, celery and swede in layers
  4. Then add a thick layer on top of each bowl of potato slices to cover
  5. Mix the stock & tomato puree and pour into each bowl - don't overflow them
  6. Season and cover them with foil
  7. Bake for 1 hour, then remove the foil and bake for another 15-20 minutes
  8. Serve with loads of super free veg
