  • 4 thick skinless cod or haddock fillets
  • Salt and freshly ground black pepper
  • 2 eggs, separated
  1. Preheat oven to 200°c/fan 180°c/ gas 6
  2. Line a tray with greaseproof paper.
  3. Arrange the fish on the tray and season well
  4. Whisk the egg whites in a large bowl until they form soft peaks.
  5. Whisk the yolks in another bowl and fold into the egg whites along with a pinch of salt.
  6. Stir to mix well and spoon the mixture over the fish.
  7. Bake for 10-12 minutes or until the egg is lightly browned and the fish is cooked through.
  8. Serve with homemade sw chips, mushy peas and a wedge of lemon.
  9. Enjoy!
