Spicy Citrus White Fish Parcels - 391 Calories (per serving - serves 2)

  • 2 x 250g white fish fillets, skinned and no bones (cod or haddock)
  • 60g carrot, cut in to batons
  • 60g courgette, sliced
  • 60g baby asparagus spears, trimmed
  • 4 spring onions chopped
  • 2 tbsp chopped parsley
  • 2 tsp teriyaki or soy sauce
  • Grated zest and juice of 1 lemon
  • Black pepper
  • 300g boiled potaoes
  1. Preheat oven to 200c (gas mark 6)
  2. Place potatoes in a saucepan and boil for 20 minutes
  3. Place both fillets in the center of a sheet of foil on a baking tray
  4. Pile the carrot, courgette, asparagus on top and sprinkle onions and parsley
  5. Drizzle with teriyaki or soy sauce
  6. Add lemon zest and juice
  7. Grind some black pepper over everything then fold the foil to make a tight parcel
  8. Place in Oven for about 15 minutes until fish is cooked
  9. Transfer the fish onto two plates
  10. Serve with the boiled new potatoes
