  • 200g of new potatoes, diced into small cubes
  • 245g of chicken, diced (skin and fat removed)
  • ¾ pint of water
  • 5g of fresh mint, chopped
  • 10g of spinach, chopped
  • 65g of leeks, chopped
  • 1½ tsp of curry powder (mild) - depends on your taste
  • 1 tsp of all spice
  • 1 tsp mixed herbs
  • 1 tsp of Cambridge vegetable drink mix
  1. Slice the new potatoes into small cubes
  2. Slice up leeks, mint, spinach and chicken
  3. Fill a pan with ¾ of a pint of cold water and bring to the boil
  4. Add the curry powder, herbs, mint, spinach and mint and leeks and stir
  5. Then add the potatoes and chicken and stir thoroughly
  6. Bring to the boil
  7. Simmer for approx 25 minutes until potatoes tender and chicken cooked
  8. (you can add ½ tsp of plain flour to thicken if you wish)
  9. Once thickened serve and enjoy
