Week 1 – 4lbs Lost – Slimming World Food Diary – Original Plan

slimming world chilli con carneAfter joining Slimming World last week I was determined to document everything I ate to ensure I was sticking within the plan guidelines and recording my sins correctly. Here is my food diary for this week. There are also some photos of my favourite things throughout the week to inspire you too :-) You may also notice this was Easter Weekend and there is no chocolate in my diary which I was pretty chuffed about, resisted, wasn’t even tempted, 4 months ago I would have binged my head off on chocolate but now 3 stone down from a VCLD and starting SW I have no intention of going back :-)

Sounds heavenly! What’s the recipe for berry burst cheesecake mousse??? Well done your meals sound lovely x

  2. Karen says:

thank you :-), the mousse is an adaptation of the SW berry burst cheesecake – I used 198g of Quark, 1 x sugar free jelly crystals, 50g of strawberries, 4 tsp of sweetner, 2 muller lights (I used turkish delight but you can use any you want so long as they are Syn free) and a sachet of gelatine – mix jelly as per packet, add gelatine and stir like mad,add to that the 2 x yoghurts, quark and sweetner and strawberries > then wiz it in a blender > poor into a dish and leave it fridge for 1-2 hours – LUSH :-) Ill write up the recipe when I get a chance to :-) – serves 8 people :-)

Hi Karen, can I just say how nice it is to see somebody dieting with what I call ‘normal food’!! I am a simple ester and everything you’ve put down in your daily diary I would eat, so you’ve shown me dieting can be achieved with normal foods x
