Ingredients
- 175g skinned turkey breast and chop into cubes
- Juice of ½ a lemon
- 1 clove of garlic, crushed
- Black pepper
- 40g brown basmati rice (dry weight)
- ½ large red or yellow pepper (deseeded)
- 4 cherry tomatoes
- ½ corn on the cob
- A large skewer
Instructions
- Place cubed turkey in a bowl + lemon juice & garlic
- Season with black pepper and stir well
- Cover & chill in fridge for at least 20 minutes
- Cook the rice according to instructions on the packet
- Slice the red or yellow pepper or cut into chunks
- Thread the turkey, pepper & tomatoes onto a skewer
- Grill or cook over barbeque until turkey is cooked through
- Meanwhile, boil or barbeque the corn
- Serve on a bed of rice with corn on the cob
