Brochette Of Turkey – 400 Calories (serves 1)

Recipe for Brochette of Turkey with peppers, served with Basmati rice & corn on the cob only 400 calories, also suitable for those following step 3 on the cambridge weight plan however you need to also add 50 calories of fruit from the step 3 allowable fruit options.

Brochette of turkey with peppers, corn on the sob and basmati rice - 400 calories, serves 1
Recipe type: simple food

  • 175g skinned turkey breast and chop into cubes
  • Juice of ½ a lemon
  • 1 clove of garlic, crushed
  • Black pepper
  • 40g brown basmati rice (dry weight)
  • ½ large red or yellow pepper (deseeded)
  • 4 cherry tomatoes
  • ½ corn on the cob
  • A large skewer
  1. Place cubed turkey in a bowl + lemon juice & garlic
  2. Season with black pepper and stir well
  3. Cover & chill in fridge for at least 20 minutes
  4. Cook the rice according to instructions on the packet
  5. Slice the red or yellow pepper or cut into chunks
  6. Thread the turkey, pepper & tomatoes onto a skewer
  7. Grill or cook over barbeque until turkey is cooked through
  8. Meanwhile, boil or barbeque the corn
  9. Serve on a bed of rice with corn on the cob
