Ingredients
- 400g potatoes, peeled & cubed
- 4 tbsp low-fat natural yoghurt
- 4 tbsp skimmed milk
- 2 tbsp chopped parsley
- Black pepper
- 60g reduced-fat cheddar cheese, grated
- Fry light
- ½ onion, finely chopped
- 60g leeks, trimmed & sliced
- 1 red or yellow pepper, de-seeded & cut into pieces
- 100g button mushrooms, quartered
Instructions
- Pre-heat oven to 180c, gas mark 4
- Boil potatoes for 15-20 minutes, until tender but not mushy
- Drain well, return to warm pan, add yoghurt & milk & mash until smooth
- Stir in the parsley & season with black pepper, then stir in most of grated cheese
- Keep a little cheese for topping
- Spray a pan with fry light, cook onion, leeks, peppers and mushrooms
- Spread half of mash over bottom of oven proof dish, add vegetables, then mash
- Rough up top with a fork and sprinkle over remaining cheese
- Bake in oven for 15 minutes until golden brown
- Serve immediately
