Chicken Curry with Jacket Potato or Brown Rice – 410 Calories (Serves 1)

chicke curry with jacket potatoThis chicken curry recipe is only 410 calories with either a 180g jacket potato or 40g brown rice, it tastes as good as it looks and take around 45 minutes to make.

Free on Extra Easy, Original (if using 200g new potatoes or Rice as HEB)

This recipe is 100% suitable if you follow step 3 of the plan too. An amazing low fat curry who would have thought there was such a thing :-)

  • 245g Chicken fillet diced or sliced (skin removed)
  • 1 Garlic Clove
  • 1 tsp cayenne pepper & 1 tsp paprika (or 2 tsp of either)
  • ¼ cup of natural yoghurt whisked
  • ½ white onion
  • 2 large Black Cardamoms
  • 2 Green Cardamoms
  • 1 Cinnamon Stick
  • 1 large Bay leaf
  • 1 Blade Mace
  • 1 tsp Coriander Powder
  • 1 tsp Fennel Powder
  • 1 tsp Ginger Powder
  • ¼ tsp Turmeric Powder
  • 1 tsp Cambridge Veg Drink made up into a mug
  • 40g Spinach
  1. Make a paste of cayenne & paprika by mixing with a little water
  2. Whisk yoghurt & set aside
  3. In blender pulse down onion & garlic until you get a pureed texture
  4. Then Fry Onion & Garlic puree in a little veg stock until soft
  5. Add 2 Black & 2 Green cardamons , cloves, cinnamon stick & bay leaf
  6. Carry on cooking & for 1 minute.
  7. Add coriander, Fennel, Ginger,Turmeric & the paste with 2 tbsp of CWP veg
  8. Stir continuously.
  9. After 2 mins add chicken & sauté for about 5 mins
  10. Lower the heat & add the yoghurt, stir well & sauté for a few minutes
  11. Add more water if needed.
  12. Cook until meat is tender (20 minutes), add spinach
  13. & remove cardimoms, cloves & bay leaves, cinnamon stick & mace
  14. Add chopped coriander & serve with either 40g brown rice or 180g jacket potato.
