Chicken, Leek & Potato Soup-410 Calories (Serves 1)
This soup is really filling, I made this tonight as I have been suffering with a cold for a few days and didn’t want anything to much to eat. This soup was more than enough for me and could easily have served two people
Free on Extra Easy, Original (if using 200g new potatoes as HEB)
It is also appropriate for step 3 of the Cambridge Weight Plan but don’t forget the 50 calories of fruit for afters. You can also reduce the chicken to 175g and remove the potatoes for step 2 & sole source + plans too.

Ingredients
- 1 pint of water
- 1 tsp of cambridge vegetable flavouring
- 1 tsp of mixed herbs
- 245g of chicken
- 200g of new potaotes
- 80g of leeks
- 1tsp of schwartz chargrilled chicken
Instructions
- Add the pint of water to a medium pan and bring to the boil
- Whilst the water is boiling slice the potatoes into small cubes
- Slice the leeks into thick strips
- Slice the chicken into chunks or strips whichever you prefer (not too thick)
- Add the herbs and vegetable flavouring to the boiling water and stir thoroughly
- Add the sliced chicken, leeks and potatoes to the water and stir
- Bring to the boil and then simmer on high heat for approx 30 minutes
- You will have a thick consistency once cooked due to the starch in the potatoes
- Serve whilst hot and enjoy
