Chicken Pepper & Mushroom Quiche – 200 Calories (serves 1)

Ingredients
  • 1 egg
  • 56.25g of low fat cottage cheese (less than 2% fat)
  • 42.5g of chicken (no skin or fat)
  • 20g green pepper (diced)
  • 25g mushrooms (sliced)
  • 35g of iceberg lettuce (shredded)
Instructions
  1. Place the egg & cottage cheese into a blender and blend until smooth
  2. Pour equally into 4 muffin size trays (like a yorkshire pudding tray)
  3. Place the chicken into a pan (no oil) and fry until tender to ensure it is cooked
  4. Add a little char grilled chicken spice to taste if you wish
  5. Chop up the cooked chicken into small pieces
  6. Equally divide the mushrooms, peppers, and chicken into the four holes in the tray
  7. Mix each to ensure covered with the egg & cottage cheese mix
  8. Place into an oven 200c and cook for 20 minutes
  9. Serve with iceberg lettuce
