Chicken, Potato & Leek Curry – 410 Calories (Serves 1)
This is a really tasty 410 calorie curry and with the addition of potato tastes fantastic and is really filling too with the potatoes.
It is also appropriate for step 3 of the Cambridge Weight Plan but don’t forget for 50 calories of fruit for afters.

Ingredients
- 200g of new potatoes, diced into small cubes
- 245g of chicken, diced (skin and fat removed)
- ¾ pint of water
- 5g of fresh mint, chopped
- 10g of spinach, chopped
- 65g of leeks, chopped
- 1½ tsp of curry powder (mild) - depends on your taste
- 1 tsp of all spice
- 1 tsp mixed herbs
- 1 tsp of Cambridge vegetable drink mix
Instructions
- Slice the new potatoes into small cubes
- Slice up leeks, mint, spinach and chicken
- Fill a pan with ¾ of a pint of cold water and bring to the boil
- Add the curry powder, herbs, mint, spinach and mint and leeks and stir
- Then add the potatoes and chicken and stir thoroughly
- Bring to the boil
- Simmer for approx 25 minutes until potatoes tender and chicken cooked
- (you can add ½ tsp of plain flour to thicken if you wish)
- Once thickened serve and enjoy
