Chicken & Veg Hotpot low fat, low calorie meal serves 2, 402 calories per serving. Also suitable for those following step 3 of the cambridge plan as option b for an evening meal.

  • 400g skinned chicken breast fillets, cut into large chunks
  • 1 red onion, cut into wedges
  • 100g leek, sliced
  • 80g carrot, diced
  • 160g baby new potatoes
  • 1 garlic glove, crushed
  • 200ml made up of cambridge vegetable flavouring or vegetable stock
  • 160g canned chopped tomatoes
  • 1 bay leaf
  • Few sprigs of rosemary, thyme or sage
  • Black pepper
  • 2 tbsp chopped parsley
  1. Place chicken, red onion, leek, carrot, potatoes & garlic in a large saucepan
  2. Pour in stock and bring to boil
  3. Lower heat & add in tomatoes, herbs & black pepper
  4. Simmer for 25-30 minutes until chicken is cooked and veg is tender
  5. Remove the bay leaf & herb sprigs
  6. Transfer the chicken & vegetables to two plates
  7. Sprinkle with parsley and serve
