This is a simple low fat recipe for chinese stir friend prawns and is also suitable for anyone following the step 2 plan on cambridge weight plan

Ingredients
  • 60g rice noodles (dry weight)
  • 6 spirng onions
  • 2 garlic cloves, thinly sliced
  • 1 tsp finely chopped fresh root ginger
  • 2 tbsp made up golden vegetable cambridge flavouring or vegetable stock
  • 250g shelled raw tiger prawns
  • Pinch of chinese five-spice powder
  • 250g spring onions, pak choi or kale, shredded
  • 2 courgettes, cut into matchstick strips
  • 1 tsp soy sauce
Instructions
  1. Soak & cook the rice noodles according to the packet instructions
  2. Meanwhile, heat a wok or deep frying pan over a medium heat
  3. Add the spring onions, garlic, ginger and golden vegebtable flavouring or stock
  4. Stir fry for 2-3 minutes
  5. Add the prawns & stir fry for 2-3 more minutes
  6. Stir in five-spice powder, shredded greens, courgettes
  7. Add soy sauce
  8. Stir fry for 3 minutes until greens are wilted & bright green but still crunchy
  9. Stir the drained, cooked rice noodles gently into the prawns,greens & serve
