Grilled Mushroom & Quorn Stacks With Brown Rice – 398 Calories (per serving – serves 2)

This recipe is again a low calorie meal which serves 2 and only 398 calories per serving. Also suitable for those following step 3 of the cambridge plan as option b for an evening meal.

Ingredients
  • 550g plain, Quorn fillets
  • 2 garlic cloves, crushed
  • Pinch of dried chilli flakes
  • 1 tbsp soy sauce
  • 70g brown rice (dry weight)
  • 2 large portobello or field mushrooms, stalks removed
  • 100g courgettes, trimmed and cut into thin slices
  • 3 tbsp finely chopped parsley
  • Black peppers
  • Splash of balsamic vinegar
Instructions
  1. Put the Quorn, chilli flakes & soy sauce in a dish
  2. Stir until the Quorn is coated with marinade and leave for 10-15 minutes
  3. Cook the rice according to the packet instructions
  4. Lift the Quorn out of the marinade
  5. Put into a foil-lined grill pan with the mushrooms and courgettes
  6. Sprinkle with the left over marinade
  7. Cook under a preheated hot grill for 3-4 minutes, turn and cook the other side
  8. Serve as follows
  9. Put a grilled mushroom on each plate
  10. Cover with Quorn (split into 2 as this serves two)
  11. Layer with remaining Quorn, courgettes and sprinkle parsley on top
  12. Season with black pepper
  13. Add a splash of balsamic vinegar
  14. Serve with the boiled rice
