Ingredients
  • 100g skinned, boned chicken breast, cut into large cubes
  • 1 tsp soy sauce
  • 1 garlic clove
  • 4 button mushrooms
  • few bay leaves
  • 225 baby spinach leaves
  • 200g boiled noodles
  • Black pepper
Instructions
  1. Place the chicken in a small bowl & sprinkle over soy sauce & garlic
  2. Turn the chicken over in the marinade until coated & set aside for 20 minutes
  3. Thread the mushrooms & chicken pieces on to a skewer alternating bay leaves
  4. Cook under a hot grill, turning, until chicken is cooked through
  5. Meanwhile steam or microwave the spinach leaves
  6. Press out any excess water and season with black pepper
  7. Serve the chicken skewer on a bed of boiled noodles with spinach
