Ingredients
- 60g carrot
- 60g leeks, trimmed & sliced
- 100g button mushrooms, sliced
- 2 spring onions, chopped
- 2 tsp chopped fresh root ginger
- Juice of 1 lemon
- 2 x 100g salmon fillets, skinned
- 1 tbsp soy sauce
- Black pepper
- 200g boiled noodles
- 2 tbsp chopped fresh coriander
Instructions
- Preheat oven to 180c, gas mark 4
- Peel thin strips off the carrot with a potato peeler
- Mix with leek & mushroom, spring onion, ginger & lemon juice
- Place each salmon fillet in center of a large square piece of kitchen foil
- Add the prepared vegetables, sprinkle with soy sauce & black pepper
- Fold the foil over the fillets to make a parcel & seal the edges
- Place on baking tray and cook for 15 minutes or until cooked through
- Put cooked noodles on a small plate x2
- Arrange salmon and vegetables on top of noodles & scatter with coriander
