This recipe is suitable for anyone wanting a low carb tasty meal and is also suitable for anyone following SS+ plan or step 2 if you use 245g of chicken, Enjoy!

Ingredients
  • 170g of chicken breast (no skin, no fat)
  • 30g of cauliflower
  • 30g of brocolli
  • 20g of cucumber
  • Any herbs and spices – Piri Piri seasoning from Tesco is used in this dish
Instructions
  1. You need to grill or dry fry the chicken breast until cooked through…
  2. Add pepper for seasoning whilst cooking and the piri piri seasoning
  3. Also add any herbs and spices you wish.
  4. Whilst the chicken is cooking, grate the cauliflower and broccoli (raw)
  5. Then microwave the grated cauliflower & broccoli together in a dish 90 secs
  6. Stir and then back in for another 90 seconds.
  7. Note – no water as they moisten themselves when in the microwave!
  8. Slice the cumber and place on a plate
  9. Place the grated vegetables on the side – Homemade Couscous :-)
  10. Place the cooked chicken on the plate
  11. ENJOY!
