Simple Egg & Chips – 410 Calories (serves1)
OK so this is not a ground breaking recipe
but I was looking at my food list on Step 3 last night and fancied something a bit naughty but healthy at the same time and of course within my allowed food so I decided to use 2 eggs as my protein, chips made from the new potato allowance and some greens as my 80g vegetable selection but this is healthy meal for anyone, not just if you are following Cambridge Weight Plan. A timeless favorite, quick to prepare.
Free on Extra Easy, Original (if using 200g new potatoes as HEB) & Green

Ingredients
- 2 large eggs (free range)
- 200g of new potatoes
- 25g green pepper
- 25g of cucumber
- 30g of iceberg lettuce
- fry light
Instructions
- Slice the potatoes (not too thick) into chip or wedge like shapes
- Spray some fry light on a baking tray or use a non stick tray
- Add the chips to the tray, spray a little with fry light
- Bake in oven on 180c for approx 20 minutes until golden brown
- While chips are baking slice the peppers, lettuce and cucumber
- Add to plate as a side salad
- Fry 2 eggs in a non stick pan with a couple of sprays of fry light until cooked
- Flip over if you desire
- Serve immediately with the chips
- Enjoy dunking your chips in the eggs I did :-)
