Chicken Balti – Syn Free on Extra Easy & Original Plans

slimming world chicken baltiSo if you want a great tasting chicken balti but without all the fat of a takeaway Indian balti then try this fakeaway syn free balti recipe.

It’s not too spicy though there is a little heat but If you enjoy a nice tasting curry then this is one for you.

Follow the steps in the recipe below as there are a few ways to make this but this is the best method and is one of Jamie Davisons fabulous recipes he has kindly donated to me. You can find his slimming world group here https://www.facebook.com/groups/275675742588587/

This recipe takes a little over an hour to make and is probably one for the weekend and it serves 4 so is perfect for the family or if you are having friends over :-) serve with slimming world chips or rice.

Ingredients
  • 4 large chicken breasts, cut into bite size pieces
  • 400ml veg stock (knorr stock pots)
  • 400ml passata
  • 2 onions, roughly chopped
  • 1 green pepper, deseeded and roughly chopped
  • 1 tomato cut into quarts
  • 3 garlic cloves, peeled and crushed
  • 2 small red chilli, deseeded and finely chopped
  • 1 inch cube fresh ginger, finely chopped
  • 1 tsp mild curry powder
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 1 tsp fennel seeds
  • 1 tsp corriander seeds
  • 1 tsp mustard seeds
  • 1 cinnamon stick
  • 2 bay leaves
  • Juice of 1 lemon
  • Salt and freshly ground black pepper
  • Frylight
Instructions
  1. Stage 1
  2. Season the chicken.
  3. In a large pan sprayed with Frylight...
  4. Cook the onions, chicken, garlic, ginger and chilli for 3-4 minutes over a medium heat.
  5. Add the curry powder, turmeric, garam masala and lemon juice and cook for another minute.
  6. Add the passata, stock, bay leaves and the cinnamon stick
  7. Cover and reduce heat to low to medium and cook for 45 minutes.

  9. Stage 2
  10. Start this about 10 minutes before the 45 minutes cooking time is up for the chicken
  11. In a frying pan sprayed with Frylight
  12. Cook the peppers,coriander seeds,mustard seeds & fennel seeds for 3-4 minutes.
  13. Now transfer to the chicken curry and add the tomatoes.
  14. Cook over a medium heat uncovered for 15-20 minutes or until the balti thickens.
  15. remove and discard the cinnamon stick and the bay leaves.
