Chicken Noodle Soup Recipe With Bacon – Free on Extra Easy Plan

chicken noodle soup with baconThis chicken noodle soup recipe with bacon tastes fantastic I have to say. I did fiddle around with some ingredients from Slimming Worlds official Italian Soup recipe and tweaked it quite a bit by adding noddles to it, some garlic and tomato puree. I also removed the herbs as I have made it before and the herbs made the soup go “off” after a couple of days and it tasted horrid. Removing the herbs in my opinion makes it taste much better.

I also made a double batch as I always like to double up on soup recipes as its the perfect time of year for soup and I eat quite a bit of it and like to have plenty. It is also great for bringing to work and heating up in the microwave for dinners as I do struggle with what to have for dinner.   • 1 onion, chopped
  • 2 large carrots, chopped
  • 4 slices of lean bacon, diced (all fat removed)
  • 2 large chicken breasts, diced
  • 600g can of tinned tomatoes
  • 700ml of chicken stock
  • 150g of medium noodles (dried)
  • Salt & Pepper
  1. add the bacon, carrots and onions to a pan
  2. stir fry for 5 minutes on high heat turning
  3. Add the chicken, tomatoes, stock and bring to the boil
  4. simmer for 20-30 mins on medium heat
  5. Add the dried noodles (I used Sharwoods which need 4 minutes)
  6. Stir
  7. Serve & Enjoy
