Cowboy Pie Recipe Slimming World Style 1/2 a Syn on Extra Easy

cowboy pieThis is one of my favorite slimming world dishes and is called Cowboy Pie, not quite sure why :-) and to me it is a cottage pie with a bit of a kick :-) but ok Cowboy Pie it is.

It is absolutely scrummy and if you like mashed potato with mince and vegetables you will love this recipe.

My mouth is watering now just writing up the recipe but I have to say Cowboy Pie is one of my Slimming World favorites, so give it a go you wont be disappointed I promise you.

Cowboy Pie Recipe Slimming World Syle Half a Syn on Extra Easy

  • 2 large onions, diced
  • 2 sticks of celery, sliced
  • 800g extra lean mince beef
  • 2 tsp smoked paprika
  • 1 tsp dried chilli flakes
  • 4 garlic cloves, chopped
  • 680g pouch of passata with basil
  • 600ml of beef stock
  • large can of baked beans
  • 400f can of red kidney beans
  • 325g can of sweetcorn
  • 4 tsp cornflour mixed with 2 tbsp of water
  • 1.85kg of potatoes
  • 300g fat-free natural fromage frais
  • 1 egg, beaten
  • Frylight
  • 1 tsp dried parlsey
  1. Stir fry the onions, celery & mince for 5-6 minutes
  2. Add the paprika, chilli flakes & garlic and stir fry for 2-3 ,more minutes
  3. Then add the passata and stock and bring to the boil
  4. Simmer for 10 minutes
  5. Add the baked beans, sweetcorn and conflour mix and season
  6. Simmer for another 10 minutes
  7. While you are doing this chop potatoes and bring to the boil cook 15-20 mins
  8. Then mash with the fromage frais and egg
  9. Add the mince mixture into an oven proof dish
  10. Then layer with potatoes and spray with fry light
  11. Then bake for 25 minutes
  12. Serve with loads of super free veg

    Thanks for the recipe bit is it correct?

    In the ingredients it states a tin of Baked Beans AND a tin of kidney beans but in the method it only mentions baked beans.

    And is it really supposed to be 4 portions? Are you feeding giants?

    Will definitely give it a whirl when I get a grip on “Easy Extra”

    Whilst we found this very tasty there was far too much for 4 people. There is too much liquid in the recipe (with the passata and beef stock well over a litre) and it was more like soup. I actually had enough of the meat mixture to do another whole dish so would half the recipe next time. I will also omit the beef stock as I suspect it doesn’t need it. Please try though as the flavour is very good.
