Lancashire Hotpot Slimming World Style Syn Free on Extra Easy

lamb hotpotWhen its cold and windy and horrible all you want is hot warm feel good food. I absolutely love this Lancashire Hotpot recipe and have made it time and time again, it does take a bit of time to prepare and cook but it is well worth it and this is perfect for a family as it will feed 4 people.

I added loads of vegetables on the side for extra super free options but I would definitely recommend you give it a try. I actually do not like celery but mixed with the other ingredients in the hotpot I could hardly taste it but next time I think I will leave it out :-)

  • 700g potatoes, sliced
  • Fresh thyme
  • 650g extra lean diced lamb
  • 2 onions, chopped
  • 2 large carrots, cubed or sliced
  • 4 pieces of celery
  • 200g of swede, chopped
  • 600ml lamb stock
  • 4 tbsp tomato puree
  1. x smallish casserole bowls - add a layer of potato slices at the bottom of each
  2. Add some of the fresh thyme on top
  3. Add the diced lamb, onions, celery and swede in layers
  4. Then add a thick layer on top of each bowl of potato slices to cover
  5. Mix the stock & tomato puree and pour into each bowl - don't overflow them
  6. Season and cover them with foil
  7. Bake for 1 hour, then remove the foil and bake for another 15-20 minutes
  8. Serve with loads of super free veg
