Raspberry Cheesecake – 5 Syns Per Serving on All Plans Serves 8

slimming world raspberry cheesecakeWe had a taster evening at group last night and I have made the topping on this many times which I use to to mix with fruit as a really low syn snack, but I thought I would make a proper cheesecake with the biscuit base this time (which does add a few Syns) but for only 5 Syns a slice it is well worth making anyway.

I have to admit it looks very “pink” and retro because of the yoghurt you use in it but everyone loved it at taster and said that it was also sweet enough (as I ran out of sweetener so I was hoping it tasted nice) You can add gelatine to it if you wish but it sets just fine without it. Of course you can use any type of syn free yoghurt and jelly to make different flavours too, toffee would be really lovely I think…

  • 8 digestive biscuits (lights are the same syn value)
  • 50g flora light
  • 1 sachet sugar-free raspberry jelly crystals
  • 2 pots raspberry Muller yogurt
  • 1 pot of quark
  • 4-5 tbsp artificial sweetener
  • Raspberries to decorate
  1. Place the digestive biscuits in a plastic bag and bash
  2. Melt flora light in a saucepan slowly
  3. Then add digestive biscuit crumbs to the flora light & mix together
  4. Spoon into the base of a loose bottomed cake tin and press down firmly
  5. Chill in the fridge for 1-2 hours
  6. Make up the jelly with ¼pt boiling water
  7. Then add in sweetener, quark and Muller lights and mix together
  8. Pour over the biscuit base (once set)
  9. Refrigerate overnight
  10. When ready to serve, remove from the tin and place on a serving plate.
  11. Decorate with a few fresh raspberries

    so excited to try this out !! in this recipe you have stated one pot of quark but how much is that as there is different sizes ? 250g or 500g ? thanks
