Speed Soup – Slimming World – Free On Extra Easy Plan

limming world speed soupSpeed Soup is the name given to this recipe which is supposed to boost weight loss whilst following the extra easy plan on slimming world. It is totally Syn Free and contains tons of vegetables and speed foods as they are called. I tweaked the recipe slightly which I got from group last week and used chicken stock cubes instead of beef and left out the handful of split lentils too. I also asked around in some Facebook groups to see what other tweaks you can make and some people add curry powder to it too and garlic for flavouring. I thought I would follow the basic recipe below first and see how it turned out.

This recipe makes about 10 portions which I put into small plastic boxes and then froze some of them, I think I may be eating this soup all week :-) Some people at group said it was horrible so I was really surprised when it tasted so nice and i will certainly be making it again for sure. It is really cheap to make too and makes loads.

  • 1 can of mixed bean salad (drained)
  • 1 can of green lentils (drained)
  • 2 cans of chopped tomato
  • 1 can of baked beans (drained)
  • 2 large leeks (chopped)
  • 1 large onion (diced)
  • 4 medium carrots (chopped)
  • 2 parsnips (diced)
  • 1 green pepper
  • 1 red pepper
  • 1 yellow pepper
  • 2 chicken stock cubes
  • salt & pepper
  • water enough to cover all the ingredients
  1. Prepare vegetables & drain cans
  2. Split ingredients into 2 pans as even as you can - i didn't have a big enough pan
  3. Make up stock with 2 -3 chicken oxo cubes and around 2000ml of hot water
  4. Pour stock over the ingredients so it just covers over
  5. Bring pans to the boil then simmer until vegetables are soft (20-25 mins)
  6. You can blend if you wish but I left mine a chunky consistency
  7. Serve and enjoy - you can freeze in batches too if you want

    I made this …was gorgeous I did this in my slow cooker then portioned off onto my freezer. Also I added curry powder and one night it acted as a curry sauce for my chicken and rice tasted amazing lovely stuff :-)
