Weetabix Muffins Free on all Slimming World Plans (USE HEB)

slimming world weetabix muffinsWeetabix muffins or Weetabix cake is a cool little recipe if you fancy keeping your HEA choice and not using your milk allowance with your Weetabix for breakfast. It is a really simple little recipe and free on all Slimming World plans if you use the 2 Weetabix from your HEB choice.

I am really into sweet recipes at the moment and constantly looking for new and odd but nice tasting recipes, I heard about this one but tweaked it a bit to make sure they rose a little in the oven as I thought they could turn out quite flat and horrible, these with the egg I added rose really well and tasted fantastic, I will certainly be making these again. You can also add some sultanas and mixed spice to this Weetabix cake recipe and syn the sultanas to make it extra juicy I use 113g roughly syns are negligible

  • 2 Weetabix (HEB choice)
  • 6 tsp of granulated sweetener
  • 1 egg
  • ½ a muller light yoghurt (any flavour so long as its a free choice)
  1. Crush the two weetabix in a bowl
  2. Add the half muller light yoghurt, egg and sweetener
  3. Mix well
  4. Pour mixture evenly into a mufffn tray this makes 3-4 muffins
  5. Bake for 25 minutes on 180 - poke them with a fork and ensure all mixture is cooked
  6. Eat either warm or cold - scatter with granulated sweetener - optional

    I love these. I add some fruit into mine ie. summer berry mix & strawberry mullerlight yogurt to make them fruitier!

      Hi ladies, just wanted to let you know that by adding fruit to the muffins, you are adding syns to them as cooking/ blending fruit is changing their natural form x

    Would be better if you top with fruit instead of putting it in you could make a topping of quark / fromage frais mixed with vanilla essence and sweetner then pop the fruit on top which would still make them syn free

    Thank you, Karen. I got your recepie from my daughter who loved them. I made them in cupcake cases rather than muffin tray and it made 5. Really nice!
    I had 2 , topped up with fresh fruit and a bit of quark and will have the rest eith afternoon tea. That’s my Healthy Option B for today!
