Ingredients
- 170g of chicken breast, no fat, no skin
- 40g of iceberg lettuce
- 10g of spring onion
- 30g of cucumber
- 2 tsp Fat Free Thousand Island Dressing with Mexican Spice
- Fajita spice
- Fry light spray
- Tabasco sauce (a glug)
Instructions
- Take the chicken and cut into fairly small strips or chunks
- Spray a wok with some fry light spray and lightly cook the chicken until tender
- Remove chicken from wok once cooked and leave to cool
- Shred 40g off an iceberg lettuce and place in the middle of a plate
- Slice 10g of spring onion and 30g of cucumber and assemble on the lettuce
- Dice the hot (or cold if you prefer) chicken
- Get a bowl and put the 2 tsp of dressing, 1tsp of fajita spice & tabasco sauce
- Mix these together then add in the chicken and stir to coat
- Pour the chicken onto the salad
- Add a generous grind of black pepper
- Enjoy!
