Spicy Mexican Chicken With Salad 200 Calories (Serves 1)

At only 200 calories this amazing snack or light meal is suitable on Sole Source + step of the Cambridge Weight Plan

BUT you can also up the chicken to 245g for step 2 so it is a versatile little recipe which is very creative with a limited food list.

Ingredients
  • 170g of chicken breast, no fat, no skin
  • 40g of iceberg lettuce
  • 10g of spring onion
  • 30g of cucumber
  • 2 tsp Fat Free Thousand Island Dressing with Mexican Spice
  • Fajita spice
  • Fry light spray
  • Tabasco sauce (a glug)
Instructions
  1. Take the chicken and cut into fairly small strips or chunks
  2. Spray a wok with some fry light spray and lightly cook the chicken until tender
  3. Remove chicken from wok once cooked and leave to cool
  4. Shred 40g off an iceberg lettuce and place in the middle of a plate
  5. Slice 10g of spring onion and 30g of cucumber and assemble on the lettuce
  6. Dice the hot (or cold if you prefer) chicken
  7. Get a bowl and put the 2 tsp of dressing, 1tsp of fajita spice & tabasco sauce
  8. Mix these together then add in the chicken and stir to coat
  9. Pour the chicken onto the salad
  10. Add a generous grind of black pepper
  11. Enjoy!
