Steak Casserole with new potatoes & green veg another low calorie meal which serves 4 so it is ideal for families and only 380 calories per serving. Also suitable for those following step 3 of the cambridge plan as option b for an evening meal.

Ingredients
  • 600g very lean stewing steak (all visible fat removed), diced
  • 1 tbsp plain flour
  • 1 medium onion, sliced
  • 3 medium carrots, cut into chunks
  • 3 tbsp tomato puree
  • 440 ml beef stock
  • 1 tbsp worcester sauce
  • 250g button mushrooms
  • 480g boiled new potatoes
  • Add an 80g portion of green vegetables per person to serve
Instructions
  1. Preheat oven to 160c (gas mark 3)
  2. Put the steak and flour in a large plastic bag and shake to coat the meat
  3. Place the steak, onions, carrots, tomato puree, stock & worcester sauce in dish
  4. Stir well, cover and then cook in oven for 1/1/4 hours
  5. Remove from the oven and stir in mushrooms and cook for a further 30 minutes
  6. Serve with new potatoes & green vegetables
