Ingredients
  • Pinch of ground tumeric
  • 2 tsp tandoori curry paste
  • 2 x 180g skinned white fish fillets (cod or haddock)
  • Black pepper
  • 100g thin green beans, trimmed
  • 100g baby courgettes, sliced lengthways
  • A few sprigs of coriander leaves, chopped
  • 1 lime, cut into wedges
Instructions
  1. Preheat oven to 190c (gas mark 5)
  2. Mix together turmeric & tandoori curry paste
  3. Turn the fish fillets in the mixture to coat them on both sides
  4. Sprinkle with black pepper & place them on a baking tray
  5. Cover with foil & bake for 8-10 minutes until fish is cooked through
  6. While fish is cooking steam the green beans & courgettes until tender
  7. Serve fish & garnish with coriander, beans & courgettes, sprinkle of lime juice
