Ingredients
- 180g macaroni (dry weight)
- Fry light
- 1 onion, chopped
- 2 leeks, trimmed & sliced
- 200g button mushrooms, halved or quartered
- 8 cherry tomatoes, halved
- 2 tsp grated half-fat cheddar cheese
- 1 tbsp wholemeal breadcrumbs
- 250g broccoli
- FOR WHITE SAUCE
- 2 tbsp cornflour
- 300ml skimmed milk
- 170g virtually fat-free fromage-frais
- Black pepper
Instructions
- Preheat oven to 190c gas mark 5
- Cook the macaroni according to packet instructions, drain and keep warm
- Make the white sauce by blending the cornflour with a little cold milk to a paste
- Bring the remaining milk to the boil, reduce heat and stir in cornflour mix
- Cook on low heat until thick and smooth, stir constantly to avoid lumps
- Remove from heat, stir in fromage-frais and pepper, cover and set aside
- Spray a frying pan with fry light, place on low heat
- Add onions & leeks and mushrooms, cook for 5 minutes till tender, add tomatoes
- Mix in the cooked macaroni, spoon into a baking dish, pour over sauce
- Sprinkle with grated cheese & breadcrumbs over the top
- Bake in oven for 15-20 minutes till golden brown
- Serve with broccoli
